Add chicken, mushrooms, broccoli, and fresh garlic, and dinner is on the table in about 30 minutes.

Fresh Ingredients

  • 1 pound boneless chicken thighs, cut into bite-sized pieces
  • 8 ounces mushrooms, sliced
  • 2–3 cups frozen broccoli
  • 3–4 cloves fresh garlic, minced
  • Freshly grated Parmesan cheese
  • Salt
  • Freshly cracked black pepper
  • Garlic powder (optional)
  • Italian seasoning (optional)

In the Kitchen

Step 1 | Bring the Water to a Boil

Bring a large pot of generously salted water to a rolling boil over high heat.

Step 2 | Season the Chicken

Season the chicken with salt, freshly cracked black pepper, a light sprinkle of garlic powder, and Italian seasoning if desired.

Step 3 | Brown the Chicken

Heat one tablespoon of Finch + Fennel Italian Extra Virgin Olive Oil in a large skillet over medium-high heat.

Once the oil begins to shimmer, add the chicken in a single layer.

Allow it to cook undisturbed for two to three minutes before stirring. This develops a beautiful golden crust.

Continue cooking until browned and cooked through, then transfer to a plate.

Step 4 | Cook the Mushrooms

Reduce the heat to medium.

If needed, add another drizzle of Finch + Fennel Italian Extra Virgin Olive Oil.

Cook the mushrooms for five to seven minutes, allowing their moisture to evaporate before they begin to brown.

Step 5 | Add the Broccoli

Add the frozen broccoli directly to the skillet.

Cook for about two minutes.

If necessary, add one to two tablespoons of water and cover the pan for another minute or two. The steam quickly thaws the broccoli.

Remove the lid and allow any excess moisture to evaporate.

Step 6 | Add the Garlic

Add the minced garlic and cook for about 30 seconds until fragrant.

Step 7 | Cook the Pasta

Meanwhile, cook the La Fabbrica Della Pasta Penne Rigate according to package directions until al dente.

Before draining, reserve one cup of the pasta cooking water.

Step 8 | Finish the Sauce

Reduce the skillet to medium-low heat.

Pour in the DeLallo Creamy Alfredo Sauce and return the chicken to the pan.

Stir gently until warmed through.

If needed, add a few tablespoons of the reserved pasta water until the sauce becomes silky and coats the pasta beautifully.

Avoid bringing the Alfredo sauce to a full boil.

Step 9 | Bring It All Together

Add the cooked pasta and toss until evenly coated.

Serve immediately.

Finish with freshly grated Parmesan, cracked black pepper, and a light drizzle of Finch + Fennel Italian Extra Virgin Olive Oil.
